Pro controller - no, the switch comes with a thing you put the joy cons in to make it more like a traditional controller.
12 month nintendo online - yes (depending on his age and whether you're happy with him playing online)
Personally I get him the Pro Controller as well (as long as he’s been good ��) nice controller and will allow you to play multiplayer games - although the supplied controller does split
The games he's asked for are only Pokemon Sword & Sheild and Luigi 3. If I can pick up a Fortnite console pack then I will, but he has that on his XBox.
I thought about the subscription if he wanted to play with friends (?)
The only reason I'm going a bit above and beyond what we would normally do for Xmas is that it's been a bit of a bad year and he has still managed to do pretty well with his school work. He'd better not expect this every year!

I don't think you need online for either of those games. Fortnite he will (I believe)

F2P games don't need the paid online service on Switch (or PlayStation). Only Xbox.

My Switch is permanently docked and I eventually had to buy a Pro Controller as I find the joycons really uncomfortable, particularly slotted into the cradle pad thing. I'm in the minority there though.
Both of those games do have online features. Luigi is a separate online multiplayer mode. Pokemon has trading and you can join other player's games as well. If he's got friends playing it that might be appealing. But you can pick up online cheap via CD Keys/ShopTo with instant email delivery so it's easy to buy as and when needed.
