The whole line was in the cinema version way back in 1975.
Here's the VCD version with the word heard over the explosion. The bluray is the same but the word is buried in the mix.

Just listened to the bluray 7.1 and then the original mono: Brody says "bitch" in both over the explosion, it's just lower in the mix in the 7.1, as has been mentioned. Everything else has been turned up a notch, especially the score, so it's not quite as audible. It's certainly not been censored, just diluted a bit because everything else is louder.

Which, again, I thought was always the point of that edit: the percussion of the explosion replaces the plosive "b" in "bitch". BOOOOOM!

Maybe censored is the wrong word then but the audio has been replaced, why didn't they notch up the voice of Brody as well as the others ?

It hasn't been replaced, just remixed: instead of just one channel for the sound where you have to balance everything against harmonic distortion, you've got seven. Things are always going to sound different: even if the mono and surround mixes were created by the same people at the same time (for example, Star Wars) you can have incredibly different things going on, let alone a mix created decades later (and I'm not defending it: the 5.1 for Jaws on DVD was a bogosity I refused to listen to).

If you're that bothered, as I said, listen to the mono track. I certainly do.
